A learning curve is the relationship between a unit production time and the cumulative number of units produced (Ref. Chase, Jacobs and Aquilno). The Pizza production system is a just-in-time (JIT) system where Learning curves is important and can be applied as a trade-offs. The organization can use learning curve by changes in seating arrangements, equipment, and staff. In this scenario, efficiency is key to customer satisfaction so the learning curve is used to measure the time it takes to service a customer and the total number of customers serviced. The process performance is based on the shortest average time for delivering the pizza to the customer from the time he orders it. The learning curve concept is based on the improvement in performance of process due to repetitive nature of tasks operated by an individual or an organization.
One of the scenario variables was increasing the conveyor ovens which had a significant impact on waiting time for 37 groups of four and 21 groups of 2 increasing the sale to $ 1, 425. The process performance is improved incrementally through doubling the units of productions while reducing the time span time following a longer period of implementation. This is also known as the rate of learning where time is constantly reduced by a given percentage. The slope of the curve is calculated by the difference between the rate of learning and numerical value of one hundred. If the timing between the doubling of units is decreased by 10 percent, then it will be known as 90 percent learning curve.
