Research about the obesity problems have been gaining more and more momentum as the national figures of obesity rates has been increasing as the economy increases, in both developed and developing countries. In 2013, a survey questionnaire distributed to 97 students in a university in Northern California indicates that positive attitudes toward local food and farmers' market use may be critical determinants of overall diet quality among college students. It reveals that positive attitudes and behaviors are significantly associated with healthy food choices among participants (Gerson, Goto, Wolff, and Giovanni, 60). In addition, the researchers discovered that gender plays a role in attitudes and behaviors towards sustainable food practices. For example, in comparison to males, females had more positive attitudes toward local food, and had more negative attitudes towards genetically modified foods. This suggests that nutrition and health professionals should consider a gender-specific approach when promoting sustainable food practices. Also, Females had more reported higher attendance at farmers' markets compared to males. Living arrangements in dormitories including lack of space and equipment to prepare foods may become a barrier to sustainable food practices. It is critical to offer college students courses in sustainable food practices addressing strategies for incorporating local foods into their diets in a cost-effective way (Gerson et. al, 60). The implications of this study mainly focus on what we can do at college level, primarily geared towards the American college population. And they are very effective solutions for obesity prevention.
Obesity is not merely a problem for developed countries such as the U.S., it has become a universal problem nowadays as global economy grows. Ten years ago, a survey study was conducted on northern and southern Chinese students ranging from 19 to 24 years old to examine their nutritional knowledge, food habits, and health attitudes. The results revealed a very healthy situation of the young Chinese university students: 80.5% of students had a normal BMI, 16.6% of students were underweight, obesity rate of BMI>30 is very low (Sakamaki, Toyama, Amamoto, Liu, and Shinfuku). It even found out that 65% of female students with BMI<20, which is under to normal weight range. However, as the researchers pointed out, changes in dietary composition, which correspond to socioeconomic growth, may accelerate the prevalence of obesity in China. It is notable that in China, the prevalence of overweight individuals increased from 1991 to 1997 (Sakamaki et. al). In the same vein with the study above conducted on the Californian college students, Sakamaki et. al contended that obesity prevention must happen at the college level for "The university and college arenas represent the final opportunity for the health and nutritional education of a large number of students." The message is clear: education is one important way to prevent obesity. However, this may seem like a privilege for those who have a college education. What about those who don't? What about those who have a low income and tend not to education themselves about nutrition and food habits? Then who will help them to make the right choices of food intake and prevent obesity?
Just four years before the release of the HBO documentary, in his book Food, Economics and Health, Dr. Bhargava elaborated five significant implications of the obesity problems in contemporary developed countries, mainly in the view of formulation of food and health policies. First, education and self-control towards cheap and energy-dense foods is especially important for low income households. Processed foods should be labeled with adverse health effects of over-consumption. Second, a simplified food labeling system such as a numerical ranking system classifying various foods into health categories should be devised by public health agencies. Third, since weight loss prevention is hard to achieve on low income individuals because they are uninsured and only seek medical help when obesity-related complications arise, the government should subsidize facilities such as gyms in poor neighborhoods to increase their exercise. Fourth, economic analyses of agricultural markets should investigate circumstances under which subsidies are necessary for production of fruits and vegetables (Bhargava, 177-178). Just as he pointed out, there is a huge difference on attitudes and behaviors towards health food choice between people who are living in poverty and people who are not. So when policy makers formulate legislations to change the national food consumption environment fundamentally, they will have to keep in mind that it is the people who don't have much power over their food choice due to limitations of financial status need the help to change the most.
In conclusion, obesity is actually a national issue far more significant than it seems to be as merely a personal health issue. Healthy food choice and lifestyle can not only improve people's lives, but also improve the country's productivity, creativity, and economy. Although it is a personal choice on what kind of food intake and lifestyle, the public media and government have an inevitable responsibility on leading the public to make the right choices for them by creating a culture through effective communication and a legal framework that enforces such personal choices.
