In the end of October, I always have dinner in a Chinese restaurant named “Buffet China” in Bradford, since it nears to my apartment. In this paper, I will describe what I have observed in “Buffet China”, find out why the waitresses in Chinese restaurant have different behaviors and attitudes to Chinese customers and other customers.
Observation in “Buffet China”观察“中国自助餐”
“Buffet China” is a Chinese restaurant, this restaurant has two floors, in the first floor, and it has bar counter, buffet table and 15 tables, the second floor, there are 10 tables and a karaoke chamber. And there are two different types of dinner it providers: Buffet and order the traditional Chinese dishes. In addition, I found the lights in each floor are different, in the first floor, the light feel warm and a little dark, and in second floor, the light is much brighter than first floor.
In my observation, because I am a Chinese, it is quite easy for me to distinguish Chinese customers and other customers, I found an interesting thing, and the waitress always leads Chinese customers to the second floor, and let the other customers take seats in the first floor.
After about one hour observation, I finally understand why there are different behaviors. On the one hand, the Chinese customers always prefer to order the meal, since the ordered dishes is quite similar as the food in China, however, almost all the non-Chinese customers choose buffet, and the buffet table is in the first floor, it is much convenience to let the buffet customers sit in the first floor. The reason why non-Chinese customers would like to choose buffet I think it has two aspects:
1. Chopsticks are not necessary for buffet, in fact, I think a pair of chopsticks is a big problem for almost all the non-Chinese customers, however, it is a little difficult to eat the traditional Chinese dishes with fork and knife, as a result, most non-Chinese customers choose buffet, because it is easy to handle the dishes of buffet with fork and knife, and enjoy Chinese tasting as well.
2. Most non-Chinese customers are used to have meal separately, whereas the feature of traditional dishes is everybody take the food from the same dish.
And additionally, the Karaoke chamber seemed only Chinese would like to access, it is said that there is no reason the non-Chinese customers
would go upstairs.
Because of those mentioned above, almost no non-Chinese customers would choose to order dishes, the waitress seemed used to that, and it is not strange why they have different behaviors between Chinese customers and non-Chinese customers.
On the other hand, may be, Chinese customers always want to have meal in a bright enough environment, whereas other customers prefer a warm environment with a little dark light.
Furthermore, the waitresses’ attitudes are also different. There are 5 waitresses in the “Buffet China”, however, there are 4 waitresses are always working in the first floor, and there is only one waitress stay upstairs, and sometimes even all the waitresses are stay in the first floor. It is really strange, since there are only 5 more tables in first floor, I felt doubt is that necessary to have some many waitress in first floor, why the waitresses are always prefer to stay in first floor.
After my observation, I find out the reasons. The most important thing is the waitresses need to explain what the dishes are in the buffet table to the non-Chinese customers, because of the feature of Chinese food. The Chinese food is always looks delicious and beautiful but it is hard to recognize what are the raw materials, although the foods in buffet are produced with some features of western countries’ food, it is still not easy to find out the raw materials, that is really a serious problem for the customers, since everyone has his/her own eating habit or religion, in this situation, the waitresses have to explain what are the dishes made of. Moreover, the non-Chinese customers always give tips to waitresses, whereas almost no Chinese customers would give tips, and tips must be a big temptation to the waitress. As a result, the different attitudes of waitresses are explained as well.

Robert and Camilla (2010) investigate the Chinese restaurant all over the world, they indicates that it is very significant to think about the customers’ sense in the restaurant (page. 67), as the aim of the restaurant is satisfied the demand of customers, the feelings of the customers are extremely precious. Then, they argued although there are a large number of non-Chinese like Chinese food very much, they may know nothing about Chinese food and Chinese food culture (page. 67), it is said the staffs in Chinese restaurant are better to help the customers understand those, it could improve the attractive of Chinese food to customers.
They also points that culture is an important factor in food market, “Cultural factors play an important role in consumer food consumption and satisfaction.” (page. 69) different countries have their own culture, to help consumers felt used to the culture is significant for the restaurant, such as, the buffet food is the reformed Chinese food, it changes with some local flavor, and as a result, consumers could easy to accept the food and culture.
However, they did not notice that restaurant is losing their own feature in the progress of adapting the local culture, so it is also significant to find out the balance point of reforming.
Conclusion and recommendation结论和建议
After observation and the study of Robert and Camilla (2010), I believe the main reason why the waitresses in Chinese restaurant have different behaviors and attitudes to Chinese customers or other customers is culture. In “Buffet China”, the difference structure in each floor, and the staff in restaurant using different approaches to different customers, it is because of the Chinese restaurant want to reduce the influence of culture shock, in order to improve the satisfaction of consumers. However, I claim the Chinese restaurant could do some promotion about the introduction of Chinese food culture, such as how to use chopsticks; this could keep the feature.
